Healthier Cheesy Potatoes
One of my favorite holiday side dishes is cheesy potatoes! I took the cheesy potato recipe that my family eats at celebrations and made a few substitutions to try to make it a little healthier. They turned out FANTASTIC!
These were 33% fewer calories per serving than the standard recipe, but they did not sacrifice on taste. I wouldn't call them healthy, but definitely healthier than the original.
Original vs "Healthier"
Calories: 171 ➡ 116
Fat: 11 ➡ 7
Carbs: 14 ➡ 10
Protein: 4 ➡ 4
Serves 12
Ingredients:
1 pound frozen hashbrowns
1/2 cup shredded sharp cheddar
1/2 onion, diced
1/4 cup Greek yogurt
1 tbsp ghee, melted
1 can cream of chicken soup
1 cup low fat cream cheese
Directions:
Preheat the oven to 375.
Mix all the ingredients together.
Press into a greased 9x13 pan.
Bake for 40 minutes.
Broil on high for 5 minutes.
