Cucumber Salad

This light and refreshing dish can be served as a side dish, eaten as a snack, or added to a salad. It's a simple recipe that can be whipped up in 10 minutes, which makes it perfect for meal prepping!


2 English Cucumbers

1 Red Onion

1 Teaspoon Salt

1 Cup Apple Cider Vinegar

1 Tablespoons of Dill


1. Slice the cucumbers into thin rounds and place in a bowl.

2. Thinly slice the red onion and add to the bowl.

3. Mix in the remaining ingredients.

4. Cover the dish and let sit in refrigerator for an hour to marinate.

5. Serve cold.


Whenever you use apple cider vinegar, be sure to buy a bottle labeled "with the mother". "The mother" contains good bacteria that were used during the fermentation process. These good bacteria are probiotics that promote gut health.

You can choose to sweat the cucumbers before making this in order to remove water content. To do this, slice the cucumbers, place them on paper towel, sprinkle on salt, and allow to rest on the counter for an hour. Dab the excess water off, then proceed with the rest of the directions.

Add feta cheese, tomato, and olives to turn this into a delicious Greek salad!
