Healthy Diner Breakfast for One

I love a good diner breakfast, but they're usually pretty unhealthy. The potatoes, eggs, and meat are all fried in low quality oil. The meal is usually pretty high in fat and sodium. This homemade version uses healthy fats, turkey sausage, and just enough salt to add good flavor.

Recommended Sausage Patties

Serves 1


1 small russet potato

2 turkey sausage patties

2 eggs

1/2 tablespoon ghee or olive oil

Nonstick spray

Salt & Pepper


  1. Heat the ghee on a large skillet over medium heat.

  2. Peel and dice the potatoes into 1/4 - 1/2 inch cubes.

  3. Add potatoes to the skillet and season with salt and pepper.

  4. When potatoes are about halfway done, move them over to one half of the skillet. Add the turkey sausage patties to the other half of the skillet and reheat according to the time on the package.

  5. As the potatoes and sausages cook, heat a small nonstick pan over medium heat and spray it with nonstick spray.

  6. Cook the eggs to desired doneness (I like over easy) or scramble them.

  7. Season the eggs with salt and pepper to taste.

  8. Plate your food and enjoy!
