I love having a simple recipe to make during the week that takes less than 30 minutes! These Pesto Zoodles are easy and quick to make, they taste delicious, and they're low carb. I made these with Chicken, but you could use tofu or shrimp. Instead of zucchini noodles you could use regular pasta or spaghetti squash. As always, here's the recipe right at the top of the page!
1 Roma Tomato, diced
1/4 White Onion, diced
1/3 cup Pesto
1/4 cup Parmesan
1 pound Chicken Tenderloins
1 tbsp Olive Oil
Spiralize the zucchini and sprinkle on salt. Let sit 15 minutes to 'sweat'.
While zucchini is sitting, heat the oil on a pan and cook the chicken tenderloin through.
Squeeze excess water out of the zucchini and cook it on the stove with the onion for 5 minutes.
Dice up the chicken and mix all ingredients together.
