This granola recipe was developed because the store bought variety is very calorie and sugar dense with very little protein. Instead of sugary binders, this recipe uses egg whites. There is also added protein powder. For 150 calories and 8 grams of protein per serving, this recipe is a winner!
2 large egg whites
2 tablespoons honey
1 tablespoon coconut oil
1/2 teaspoon vanilla extract
1 cup old fashioned or instant oats
1/2 cup unsweetened, shredded coconut
1/3 cup chopped nuts
1/2 cup vanilla protein powder
1/3 cup dried cranberries (craisins)
1/2 teaspoon salt
Optional: 3 tablespoons superfoods (I used 1T each of chia, flax, and hemp seeds)
Preheat oven to 350 F.
Mix together the egg whites, honey, coconut oil (melt first for easier mixing), and vanilla extract.
Add in oats, coconut, nuts, protein powder, craisins, salt, and superfoods.
Mix well and spread evenly on a sheet pan.
Bake for 15-20 minutes
Break the granola up into pieces and use to top yogurt, eat with milk, or just nibble on.
