Protein Pancake Mix - Gluten Free

This pancake mix can be made in bulk so that the day you want pancakes, all you have to do is add the milk of your choice. These can be made vegan by using plant based protein and milk.

Ingredients:

  • 2 cups GF oat flour

  • 1/2 cup vanilla protein powder of choice

  • 1/4 cup monk fruit sweetener blend (or granulated sweetener of choice)

  • 2 tablespoons baking powder

  • 1-1.5 cups milk

  • Optional Mix-ins (chocolate chips, nuts, berries, etc.)

Directions:

  1. Blend together the dry ingredients first.

  2. Add milk until the consistency is thick, but pourable.

  3. Cook on a griddle over medium heat.

  4. Store extra pancakes in the freezer and put them in the toaster to reheat.
