Today’s lunch: What’s in the pantry edition.
Instead of going to the grocery store I came up with a recipe based on what was already available in the pantry and fridge. I came up with this fruity chicken quinoa dish! Ingredients can be swapped out based on what you have in your pantry!
3 cups cooked quinoa
1/4 cup craisins
1/4 cup dried apricot
1/8 red onion
1 can chicken
1/4 cup Parmesan cheese
1/2 cup honey mustard vinaigrette
Mix everything together and serve!
