Summer Vegetable Bake

Pretty and delicious!

My college roommates mom made something similar to this for us once. I was a vegetarian at the time and I probably could have eaten the whole pan. I tried making a copy cat from memory and it didn’t disappoint!


1 Zucchini

1 Yellow Squash

2 Tomatoes

8 Garlic

1 T Olive Oil

Salt & Pepper to taste


  1. Preheat oven to 375 F.

  2. Slice the veggies and peel the garlic.

  3. Toss everything in oil, salt, and pepper.

  4. Alternate the veggies on the pan. (Feel free to mince the garlic if you desire, but this was how I had it the first time and I love whole roasted garlic cloves).

  5. Bake for 25 minutes.

Enjoy on it’s own or it makes a great side to chicken!
