Zucchini Boat Pizza

I’m all for indulging in actual pizza when you want it, but these low carb, fewer calorie pizza boats really hit the spot. It’s a great option to tide you over between real pizzas.


The trick to make them taste absolutely amazing? Broiling at the end. Don’t skip this step! It gives the cheese the bubbly brown spots that we know and love.


Ingredients:

2 zucchini

8 tablespoons pizza sauce

Shredded Mozzarella (as much or little as you want)

Any other pizza toppings (I used pepperoni, Parmesan, and basil paste)


Directions:

  1. Preheat the oven to 375 F.

  2. Scoop the seeds out of the zucchini.

  3. Add sauce, desired toppings, and cheese.

  4. Bake 15-20 minutes.

  5. Broil on high 5 minutes.


These easily reheat the by broiling for 5 minutes. Enjoy!
